Our Classes

At Foodways at Nana Cardoon, we practice regenerative farming rooted in cultural traditions, ecological stewardship, and intergenerational learning. Our work includes composting, seed saving, water catchment, food forest management, and traditional food preparation, from fermentation to ancestral cooking techniques. These practices support both environmental sustainability and community nourishment.

We believe that sustainably-produced local offerings can be the basis of protein-rich foods and fermented beverages. These foods are the rights of our citizens. Part of our curriculum goals and outreach to our young and adult students – is to suggest dishes and usage that reflect a wide range of food and cultural identity. It is on all of us to eat what our local farms can produce in order to support equity, diversity, and inclusion.
